Lentil Tacos

These lentil tacos are loaded with flavor (lots of hidden veggies) and taste so good…my entire family LOVES them!

Lentil Tacos

  • 500 grams Precooked lentils - I get mine at trader joes

  • 1/2 red onion, thinly sliced

  • 2 cloves of garlic or already pureed garlic

  • 2 Sun-dried tomatoes, chopped

  • Large broccoli stem, shredded

  • 1 tablespoon Tomato puree

  • 1 teaspoon Smoked paprika

  • 1 teaspoon cumin

  • Pinch of pepper

  • 1 tablespoon Nutritional yeast

  • 1 teaspoon Tamari or soy sauce

  • Shredded red cabbage

  • Cilantro (optional)

  • avocado

  • Salsa

  • Small corn or flour tortillas


    Sautee the onion in a little olive oil for about 3-5 minutes, add in the garlic, sun-dried tomatoes, and broccoli stem and toss. Add in the lentils, tomato puree , smoked paprika, cumin, pepper, nutritional yeast, and tamari and cook until everything is heated through.

    Serve in warmed tortillas topped with cabbage, cilantro, avocado and salsa
